I was looking for a ground beef recipe that would be great with a bottle of red wine a friend just gave me, and stumbled upon an easy yet delectable Ground Beef Stroganoff dish. I made tweaks here and there to account for ingredients I have at hand. Here's an adaptation of the recipe from the Emeril Live show:
Ingredients:
1/2 pound lean ground beef, seasoned in salt, pepper, paprika and oregano
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1 tablespoon olive oil
1/4 cup chopped yellow onions
1 can dry cooked peas
1 teaspoon chopped garlic
1/4 pound small elbow macaroni, cooked
2 cups beef broth/milk mix containing water from cooked the macaroni, some milk, and a squeeze of lemon
2 tablespoons cheese pimiento spread
Procedure:
1. Heated a pan with the olive oil over medium heat.
2. Added the seasoned beef and stir-fried until well browned. Drained off excess oil.
3. Added onions and stir-fried until soft. Added garlic and stirred to cook until soft and slightly browned.
4. Added the macaroni, beef broth/milk mix, and peas. Cooked by stirring until the mixture thickened slightly
5. Added the cheese pimiento, mixed.
Voila! Big carbovore I am, I ate this with a bit of white rice (as you can see in the picture...bowl's half-consumed already). Yum!
You can substitute the peas with mushrooms (I had none available), and actual cheese or parmesan for the cheese spread :) Enjoy!
